3. Glazing: bring water in a pot to boil, remove from heat and put in ‘glaze bag’ and leave for 5 minutes. Dry bag with a paper towel, knead well, cut open and spread the glaze with a brush on the cream. Gently, using a fork, create a wavy pattern on the glaze. Cake is best served cold.
