Our original Swabian spaetzle has always been carefully produced according to a traditional recipe. The pasta has a golden yellow color, a rough and porous surface and the robust bite. Original Swabian Spätzle are recognized by the EU as protected geographical indications. They can only be manufactured as “original” in Swabia.
