Ostmann Potash is used as a raising agent with a distinctive flavor, especially for loosening doughs with a high sugar content and used as flat pastries (e.g., honey cake dough). These types of dough are best left to rest for a few hours or days (covered and in a cool place), as the potash provides the typical loosening effect during this time.
Use: 10 g (one heaped tablespoon) per 500 g of flour is usually sufficient. Always dissolve in a little lukewarm water before use.
