The Dr. Oetker Baking Mix, enables you to create this fluffy, refreshing classic quickly and easily. A delicate Viennese sponge is filled with a fluffy mixture of fresh cream and quark, with a hint of lemon.
Ingredients: Sugar, WHEAT FLOUR, starch (WHEAT), gelatin, modified starch, powdered sugar, raising agents (diphosphates, sodium carbonates), emulsifiers (E 475, E 471), acidifier (citric acid), flavouring, thickener (E 466). May contain: EGG, SOY, MILK.

Preparation:
You will need: 100g soft margarine or butter, 3 eggs (size M), 500g cold whipped cream, 200ml warm water, 500g quark
- Place the baking mix for the sponge in a mixing bowl, add margarine or butter and eggs. Process everything with a mixer (stirring sticks) on the highest setting for about 3 minutes to form a smooth batter. Pour the batter into the springform pan, smooth it out and place it in the oven on the lower third rack. Baking time: approx. 30 mins.
- Turn the cake out onto a baking wire rack lined with baking paper and leave to cool.
- Preparing the base, remove baked baking paper from the bottom. Cut the cake horizontally once. Place the bottom layer on a cake plate. Place the cake ring or cleaned springform pan edge around it.
- Whip the filling cream until stiff. For the filling, put the mixture in a mixing bowl, add warm water and stir well with a whisk. Stir in the quark in portions, then fold in the cream. Spread the filling on the base. Place the top layer on top, press down lightly and place in the refrigerator for at least 2 hours.
- Before serving, loosen and remove the cake ring. Sprinkle the cake with icing sugar.
