Filling: 4 egg whites (size M), 4 egg yolks (size M), 150g sugar, 750g quark (lowfat), 1 packet Dr. Oetker vanillin sugar, 1 packet Dr. Oetker finesse grated lemon peel, 250ml milk, 1 packet Dr. Oetker cheesecake helper.
Preparation:
Grease the floor of the baking tin. Preheat oven. Upper / lower heat: about 170 ° C, hot air: about 150 ° C.
Mix the flour with the backin in a mixing bowl. Add remaining ingredients and use a hand mixer (kneading hook) to process the dough at the lowest, then at the highest level. Bring out 2/3 of the dough on the bottom of the baking tray and insert with a fork several times. Close the spring form edge. Form the remaining dough into a roll. Place the dough roll as a border on the dough base and press on the mold in such a way that a 3cm high edge is produced.
Whip egg whites stiff with 1/3 of the sugar. Note: Stiff so that a knife cut remains visible. Mix egg yolks with remaining sugar, curd, vanilla sugar, finesse and milk in a mixing bowl with a hand mixer (whisk) at the highest level for 1 minute. Stir in the cheesecake, then add the egg yolk. Smooth the cheese mixture in the tin. Put the tin on a baking rack in the lower third of the oven. Baking time: about 70 minutes.
Add 100g raisins under the cheese mixture.
